I can’t wait to get out there and start grilling up some awesome summer recipes. It’s time to let the neighbors know that I’m back in business. Let’s start with something really simple this season. How about some easy grilled Chicken thighs?

Mmmm Sounds pretty darn yummy. You don’t need anything fancy, just your standard garden variety charcoal grill. Although if you want to do fancy, by all means, please do so.

Ok, Folks, it’s time to get this party started. But, the first thing you should always do is make sure your grill is cleaned and ready for cooking.

Now, it’s time to get your chicken thighs seasoned and ready for the grill. I’m going to show you a simple rub that I like to use on my chicken thighs. This rub is a little spicy, so, if you don’t like spice just omit the cayenne pepper or adjust the amount to suit your taste. None of the ingredients in this rub are carved in stone, So feel free to add, delete, adjust or experiment with this rub. It’s just a basic starting point.

Ingredients

The Rub

1/2 tsp. cayenne pepper

1 tbsp. black pepper

1 tbsp. Sea salt

1 tbsp. garlic powder

1tblsp. mustard powder

1 tbsp. onion powder

2 tbsp. Smoked paprika

combine ingredients in a small bowl and mix until the are no lumps. Set aside. 

The Chicken Thighs

You will need 4-6 medium to large chicken Thighs. (bone in skin on) Rinse and pat dry with a paper towel.

Preparation

Preheat your grill to medium hi heat using the 2 zone cooking method. It’s always best to have a cool side of the grill just in case of flare-ups.

Sprinkle the rub generously on all sides of the chicken and set aside until grill comes to temp.

Cook thighs over indirect heat for aprox. 30-45 minutes or until internal temp. reaches 170°f *

Remove chicken fron heat let rest approx. 5-10 minutes and enjoy

This easy grilled chicken thighs recipe is great with or withot BBQ sauce.

*Please do not serve poultry cooked to less than the recommended temps. It is under cooked and and could cause serious illness or worse.
