Memphis Style BBQ Ribs

I got this rub recipe for Memphis Style BBQ Ribs from a friend of mine who loves grilling almost as much as I do. I really like this rub especially when combined with a really good Memphis style BBQ sauce. The cooking of the ribs is pretty standard and it’s the way that I usually grill/smoke my ribs. The only thing that ever really changes is the the rub and the sauce. I hope you folks enjoy

Ingredients:

Protein:

1 rack pork ribs

Rub:

  • ¼ cup paprika
  • 2 tablespoons salt
  • 1 teaspoon Cayenne (more or less depending on your taste).
  • 2 tablespoons onion powder
  • 2 tablespoons black pepper (fresh ground)

Sauce:

Your favorite Memphis style BBQ sauce.

Directions:

  1. Mix all dry ingredients in a bowl.
  2. rinse ribs in cold water and remove membrane if applicable.
  3. Pat dry with a paper towel. I like to rub a little Olive oil on my ribs before adding the rub. But this step is completely optional.
  4. Apply even coat of rub on all sides of ribs
  5. Place ribs in plastic wrap or airtight container and refrigerate for 1 to 24 hours.
  6. Remove ribs from refrigerator 1 hour before cooking so that they are at room temperature before placing them on the grill.

Prepare Your Grill:

Since I use a kettle grill I prefer to use the 2 zone method with a drip pan on the cool side. However, any indirect grill method that you choose should be fine.

Preheat your grill to about 225 but no more than 250. Wood chips can be added to coals for extra smoky flavor. (I like apple wood for pork).

Place your ribs on the indirect side of the grill bone side down and cover.  Cook ribs for 1 1/2 to 2 hours flip ribs and cook another hour total cooking time should be 21/2 to 3 hours. In the final 30 minutes of cooking apply a cost of your favorite BBQ sauce cook for 15 minutes flip and add more sauce. Cook the final 15 minutes and remove from grill onto a large baking sheet. Let rest for 7 to 10 minutes before slicing and serving.
