I can’t think of anyone I know that doesn’t love chicken wings. Especially when they come hot off the smoker. This crispy garlic and herb chicken wings recipe is one of my favorites.

I usually cook my wings on a charcoal grill. But this time I wanted to try them on a wood pellet grill. I went low and slow to get some additional smoke flavor.
The best thing about making my own wings is I know I’m getting chicken wings. I have been to some of the big name wing joints around here and it’s like they’re serving baby humming bird wings. Let’s won’t mention any names but I’m sure you’ve probably stopped by this wing place before.
I must say that they turned out pretty awesome. The texture was great, the skin was crispy and the meat just pulled away from the bone without effort.
In this super easy chicken wing recipe I’ll share with you the method used for preparing these wings. I’ll share the seasoning I used and what my biggest critics had to say.

Crispy Garlic Herb Chicken Wings
Equipment
- wood pellet grill/smoker
Ingredients
- 2-3 Lbs. Chicken Wing Sections
Brine
- 1/2 cup salt kosher
- 1/2 cup black ground pepper coarse
- 1/3 cup California Style garlic powder coarse
- Water
Rub
- 1/4 cup Kingsford garlic and herb seasoning all purpose
- your favorite Wing Sauce optional
Instructions
- Place wings in a large bowl and ad salt, pepper and garlic. Cover with water and refrigerate for 4 hours or up to 24 hours. Then rinse and then pat dry with a paper towel.
- Place on a cookie sheet in a single layer and sprinkle generously with seasoning. Flip the wings and apply seasoning to the other side.
- Pre-heat wood pellet grill/smoker to 325F. When grill is to temp. Place wings in a single layer on the grill and close the lid. When skin starts to get crispy this could take 25-30 minutes flip the wings placing the crispy side up and cook for approx. another 25 to 30 minutes checking halfway through. Internal temp. should be 170F for the best texture.
- Remove from grill and Toss in your favorite sauce(optional)

What The Critics Say:
My biggest critics are my wife and teenaged daughter. Both are very finicky eaters. Both have taste buds like master chefs and can detect a seasoning down to 1ppm. That may be an exaggeration but they can taste any minor adjustment to a seasoning. This time I went with the Kingsford seasoning instead of the weber. I didn’t think they would notice but that was the first thing they mentioned. They also noticed that I used Pitboss wood pellets instead of Traeger. But in the end they said that these are the best tasting wings they’ve had in a long time.
